    Between the Vines Estate Vineyard Tours at Whitman Hill Winery. Véraison Purple Persuasion August 6th - September 7th. One of the most important moments in a grapevine's annual life cycle is the onset of ripening. Véraison occurs when the grapes turn from green to red. The vine alters its focus from energy creation to energy consumption, where the grapes begin to dramatically increase in size as they accumulate sugars and develop aroma compounds. We employ various vineyard maintenance practices to yield more quality fruit: "dropping fruit" ensures the remaining clusters receive more nutrients and sugars; trimming away excess leaves slows the rate of ripening to when temperatures are cooler for harvest; and netting more susceptible blocks of the vineyard protects the grapes from birds and insects.
